Ingredients:

1/2 cup of buttermilk

1 teaspoon of poultry seasoning

1 cup of cornflakes, crumbled

2 teaspoons of black pepper

1 1/2 tablespoons of garlic powder

1 1/2 tablespoons of onion powder

2 teaspoons of crushed, dried hot pepper

1 teaspoon of ground ginger

8 pieces of skinless chicken or 4 leg quarters

1 teaspoon of vegetable oil

1 pinch of paprika

Directions:

  1. Preheat your oven to 350 degrease.
  2. Add a 1/2 of a teaspoon of your poultry seasoning to your buttermilk.
  3. Combine all of your other spices to your cornflakes and place them into a zip-lock bag.
  4. Wash all of your chicken pieces and pat dry. Dip each chicken piece into your buttermilk, then quickly drop the piece into your bag and shake with the seasoned cornflakes.
  5. Place you chicken in the refrigerate for one hour.
  6. Remove your chicken and sprinkle it lightly with a pinch of paprika.
  7. Place your chicken in your greased baking pan and make sure that they are evenly spaced.
  8. Cover your baking pan using aluminum foil and then bake for 40 minutes. Next, remove the foil after 40 minutes and then continue baking for another 30 to 40 minutes.

This chicken recipe is both easy and healthy. Also, because of the added buttermilk and cornflakes, this recipe is quite healthy compared to the traditional fried chicken that is cooked in grease.

Ingredients:

2 tablespoons of olive oil

1 can of whole kernel corn

1 can of sweet peas

2 crushed cloves of garlic

1 teaspoon of crushed chili

1 teaspoon of ground cumin

Directions:

  1. Heat your olive oil in a large skillet.
  2. Add your garlic, crushed chili and cumin to the oil and allow everything to fry for one minute while stirring well.
  3. Add your corn and peas. Mix well and continue to fry for two to three minutes until everything is hot.

This is an easy recipe for a spicy side dish that your family will love. It is super easy way to spice meals up a bit while making sure that your family gets all the healthy veggies they need with their meal.

Ingredients:

2 cups of milk

1/4 cup of creamy peanut butter

1 package of instant French vanilla pudding mix

1/2 teaspoon of water

1/3 cups of raspberry jelly or preserves

Whipped cream for garnishing

Chopped peanuts for garnishing

Directions:

  1. Using an electric mixer, gradually blend your milk and peanut butter. Next, add your pudding mix and continue beating on low speed for two minutes.
  2. Stir water into your jelly and blend well. Layer your pudding and jelly mixtures into parfait glasses top each dessert with whipped cream and chopped peanuts.

Ingredients

175g (6oz) butter

3 tbsp golden syrup

150g (5oz) light muscovado sugar

350g (12oz) porridge oats

50g (1¾oz) plain flour

½ tsp bicarbonate of soda

50g (1¾oz) dried cranberries

50g (1¾oz) desiccated coconut

25g (1oz) sunflower seeds

25g (1oz) pumpkin seeds

This seems like a lot, but you build up stock after a while.

  1. Preheat oven to 350°F, 180°C, gas mark 4. Lightly butter an 8x8inch tin.
  2. Melt the butter, syrup and sugar together in a pan then stir in the oats, flour and a pinch of salt.
  3. Stir in all the other ingredients and pour into the tin.
  4. Cook in the oven for 18-20 minutes until golden brown, but still slightly soft and place on a wire rack.
  5. Slice into bars while it’s still hot and only remove from the tin once it’s cold.

Humble Beginnings

This Saturday, I’m making seven people their tea; Mum, Dad, Sister, Uncle, Granny and Granddad. It’s really a celebration of Grandad’s 74th birthday (which was 3 months ago) but we’re disguising it as a family dinner. I’m doing all the cooking, so I  wanted to make a big deal out of it. We don’t really have tablecloths made of silk or velvet, but we do have a navy blue bed sheet and some curtains.

The blue is the bedsheet, which I sellotaped to the table, and the checked fabric was the curtains.

So, what’s on the menu you ask? I am yet to make these,so I’m not sure how they’ll turn out. They’ll either join my everlasting list of recipes or fall into the failures. Anyway, Saturday will go (hopefully) a little like this:

For nibbles- Cheese Pinwheel Scones and Crisps

Cheesy (very cheesy, they need cheddar, goats and parmesan) doughy scones topped with a good dose of black pepper.

For starter- Spinach, Sage And Potato Soup

Beautiful colour in the photo, a very rich dramatic green I hope it can live up to.

For main- Chicken With Goats Cheese And Tomatos

Easy, simple, something I can prepare earlier then just put in the oven.

For desserts- Lemon Curd Brûlée

I picked this because it said you can make the curdy bit the night before then caramelise it in the grill for 2-3 minutes before serving.

For afters- After Eights and Coffee

Ingredients:

  • A good few bags of freshly picked sloes, (think of it this way- every bottle will be filled half way up with sloes, you can do the maths from there) you can buy sloes but it is all the more special if they are hand picked in your local area. Note!: Sloes are ready to pick after the first frost (usually late September/ early October).
  • 150g of granulated sugar per bottle
  • Gin to make up the rest of the bottle

The recipe is as simple as this:

  1. De-stalk all of your sloe berries then prick each with a needle just slightly. (this will help them flavour the gin)
  2. Pour in the granulated sugar.
  3. Pour in the gin to the top of the bottle.
  4. Secure the top of the bottle and turn it.
  5. For the first week, turn the bottle over (so the sloes go down to the top) and then back up again everyday.
  6. After this, rotate the bottle once every week until serving. The gin will be ready to drink after approximately 4 weeks.
